ITG Cauliflower Soup

  • 0.5 tablespoon(s) Olive Oil
  • 1 Garlic Clove, minced
  • 0.5 Onion, diced
  • 2 cup(s) Cauliflower, diced
  • 8 ounce(s) Water
  • 1 Packet of ITG Cream of Chicken or Cream of Mushroom Soup Mix
  • 1 dash(es) Sea Salt and Pepper to Taste

ITG Cauliflower Soup Directions

  1. Heat oil in medium size pot, over medium heat. Add garlic and onion, sautee until soft and fragrant. (Be careful to not caramelize the onions.)
  2. Add diced cauliflower, water and ITG soup packet and bring to a boil. Reduce heat and simmer for 15-20 mins. or until cauliflower is softened.
  3. Carefully pour contents from the pot into a blender and blend well. Add sea salt and pepper to taste.
  4. Top with fresh herbs of your choice (basil, rosemary or even green onions works well).
