Heat oven to 350o F
Blend ITG Maple Brown Sugar Oatmeal in blender until fine
Place shredded veggies in a large bowl
Use cooking spray to coat soufflé dish, cover with a dusting of the ground oatmeal (any excess oatmeal, pour out into veggies)
Add remaining oatmeal and seasonings to veggies, stir until everything is coated. Make sure if veggies are still damp (zucchini) to evenly coat all items in bowl
Beat egg whites until they are stiff, and stir half of them into veggie mix making sure to coat everything. Add remaining egg whites
Pour into soufflé dish and bake 20 minutes or until the mixture is firm
